These just scream Summer.
With our weather heating up in the PNW, these refreshing popsicles are the perfect treat to hit the spot on a sunny afternoon. These come together super quickly and are packed with nutrients for you and your little ones. Raspberries have one of the highest antioxidant contents of any fruit, and watermelon is rich in potassium, magnesium and lycopene. Both these fruits are very low on the glycemic index, so the balance of fiber with lower sugar content means you won’t have a blood sugar spike, which leads to more cravings for sweet treats.
Makes 5 popsicles:
3 c. chopped watermelon
1 c. raspberries, fresh or frozen
1 tbsp. raw honey (optional)
Put all the ingredients in a high speed blender and blend until smooth. Pour into popsicle molds (I really like these) and freeze for 3-4 hours or until hard.
